Alfredo (Italian) - A creamy white sauce, usually consisting of melted cheese and butter.
Au Gratin - with cheese.
Au Jus - with juice.
Bharta (Indian) - Spicy vegetable dish w/ pulp-like consistency. Commonly made w/ eggplant (Baingan Bharta)
Biryani (Indian) - Elaborate dish w/ spiced saffron rice, usually cooked w/ lamb, chicken, shrimp or vegetables.
Burrito (Mexican) - Flour tortillas rolled around w/ meat & topped w/ cheese & onion sauce.
Chalupas (Mexican) - Flat tortillas w/ fried beans, sprinkled w/ cheese & topped w/ guacamole salad.
Chile con Queso (Mexican) - Flat, crisp tortillas w/ cheese & jalapeno peppers on top.
Chile Relleno (Mexican) - Pieces of bell peppers stuffed w/ beef & cheese.
Churros (Mexican) - Straight cinnamon sticks.
Duritos (Mexican) - Tortillas cut & fried crisp in oil.
Enchiladas (Mexican) - Tortillas rolled around seasoned fillings, topped w/ sauce & cheese.
Guacamole - Avocado salad.
House Special (Chinese) - Fried rice or lo mein with pork, shrimp & chicken.
Kaeng (Thai) - means curry, a diverse category of dishes.
Korma (Indian) - A sauce thickened w/ yogurt, nuts or poppy seeds.
Kulcha (Indian) - Flatbread, often stuffed w/ onion or potatoes seasoned with cilantro.
Larb (Thai) - Minced chicken or beef w/ chilies & lime juice.
Lemon Grass (Thai) - Long, pale green stalks with a woody texture and a lemon scent. Used in sauces, soups & curries.
Nachos (Mexican) - Melted cheese w/ jalapeno peppers on toasted tortillas.
Pad or Phad (Thai) - fried or stir-fried.
Pad Thai - Pan fried rice noodles w/ vegetables or w/ chicken, beef, pork, tofu or shrimp.
Pakoras (Indian) A crispy & spicy snack, seved hot. Lots of varieties w/ potatoes, onion, chilies, eggplant, etc.
Pesto Sauce (Italian) - A blend of crushed basil, crushed garlic, olive oil, Parmesan cheese and pine nuts.
Quesadilla (Mexican) - Flour tortilla filled w/ cheese, then grilled to the melting point (grilled cheese - Mexican style).
Roti (Indian) - Means bread in Hindi.
Samosas (Indian) - Fried pastry appetizers filled w/ vegetables or meat.
Sopapillas (Mexican) - Fried flour tortillas w/ honey, butter & cinnamon.
Tacos (Mexican) - Tortillas, folded & fried crisp, filled w/ meat, lettuce & cheese.
Tamales (Mexican) - Savory meat fillings steamed in corn meal casings.
Tandoor (Indian) - Traditional Indian clay oven that gives food a distinctive flavor.
Taquitos (Mexican) - Corn tortillas wrapped around chicken or shredded beef.
Tortillas (Mexican) - Thin corn pancakes used as a base for many dishes.
Tzatziki Sauce (Greek) - Made of strained yogurt with cucumbers, garlic, salt and usually olive oil, pepper, dill. Sometimes lemon juice, parsley or mint are added.
